Ingredients

Cake

  • 3 large eggs

  • 1/3 cup coconut sugar or light brown sugar

  • 1 teaspoon vanilla extract

  • 1/2 cup all purpose flour

  • 1/4 cup almond flour

  • 1/4 cup unsweetened cocoa powder

  • 1 teaspoon baking powder

  • 1/4 cup Greek yogurt or light oil

Filling

  • 3/4 cup Greek yogurt or light cream cheese

  • 2 tablespoons honey or maple syrup

  • 1/2 teaspoon vanilla extract

    Optional Topping

    • Cocoa powder or melted dark chocolate


Instructions

  • Preheat oven to 350°F and line a rimmed baking sheet with parchment paper.

  • Whisk eggs and sugar until light, then add vanilla.

  • Fold in flours, cocoa powder, and baking powder. Mix in yogurt or oil.

  • Spread batter evenly in pan and bake for 10 to 12 minutes.

  • Roll cake gently while warm using parchment paper. Cool completely.

  • Unroll, spread filling evenly, then roll back up.

 

  • Dust with cocoa powder or drizzle with dark chocolate if desired.
