Ingredients

2 tablespoons olive oil

1 medium onion, chopped

2 cloves garlic, minced

3 carrots, sliced

2 celery stalks, chopped

2 medium potatoes, diced

1 cup green beans, trimmed and cut

1 cup corn kernels (fresh or frozen)

1 cup cooked shredded chicken or beans (optional for vegetarian)

6 cups vegetable or chicken broth

1 teaspoon dried thyme

1 teaspoon dried parsley

½ teaspoon black pepper

Salt to taste

Fresh parsley for garnish
Instructions

Wash, peel, and chop all vegetables.

Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté 2–3 minutes.

Add carrots, celery, and potatoes. Stir for 2 minutes.

Pour in broth and add thyme, parsley, salt, and pepper. Bring to a boil, then simmer 20–25 minutes.

Add green beans, corn, and cooked chicken or beans. Simmer another 5–10 minutes.

Taste and adjust seasoning. Garnish with fresh parsley and serve hot.
