Ingredients

1 pound boneless, skinless chicken thighs or breasts, cut into chunks

1/2 cup plain yogurt

2 tablespoons fresh lemon juice

3 garlic cloves, minced

1 tablespoon fresh ginger, grated

1 teaspoon garam masala

1 teaspoon ground cumin

1 teaspoon paprika

1/2 teaspoon turmeric

1/4 teaspoon cayenne pepper (optional)

1/2 teaspoon salt

1 tablespoon oil (for brushing the grill or pan)

Skewers (metal or soaked wooden)
Instructions

In a large bowl, whisk together yogurt, lemon juice, garlic, ginger, and all spices until smooth.

Add chicken pieces to the marinade and coat well. Cover and refrigerate for at least 1 hour, up to 8 hours.

If using wooden skewers, soak them in water for 30 minutes.

Thread marinated chicken onto skewers.

Heat grill or grill pan to medium-high. Brush with oil.

Grill skewers for 4–5 minutes on each side, until chicken is cooked through and slightly charred.

Serve hot with lemon wedges and fresh cilantro.
