Description

Ingredients

For the crust
Graham cracker crumbs
Granulated sugar
Melted butter

For the cheesecake filling
Cream cheese, softened
Granulated sugar
Eggs
Vanilla extract
Sour cream or heavy cream

For the strawberry topping
Fresh strawberries, sliced
Granulated sugar
Lemon juice


Instructions

  • Preheat the oven and lightly grease a springform pan.

  • Mix graham cracker crumbs, sugar, and melted butter until combined. Press firmly into the bottom of the pan and bake briefly. Let cool.

  • Beat softened cream cheese until smooth. Add sugar and mix well.

  • Add eggs one at a time, mixing gently. Stir in vanilla and sour cream until creamy.

  • Pour the filling over the cooled crust and smooth the top.

  • Bake until the center is just set with a slight jiggle.

  • Turn off the oven and let the cheesecake cool gradually inside with the door slightly open.

  • Chill completely in the refrigerator for several hours or overnight.

 

  • Mix strawberries, sugar, and lemon juice. Spoon over the cheesecake before serving.
