Description

Soft, fluffy muffins filled with a creamy cheesecake center and bursts of fresh strawberries. Perfect for breakfast, brunch, or a sweet snack anytime!


Ingredients

Muffin Batter:

  • 1 ½ cups all-purpose flour

  • 2 tsp baking powder

  • ¼ tsp salt

  • ½ cup granulated sugar

  • 1 large egg

  • ½ cup milk

  • ¼ cup vegetable oil or melted butter

  • 1 tsp vanilla extract

  • 1 cup fresh strawberries, chopped

Cheesecake Filling:

  • 4 oz cream cheese, softened

  • 2 tbsp granulated sugar

  • 1 egg yolk

  • ½ tsp vanilla extract


Instructions

  • Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.

  • In a bowl, whisk together flour, baking powder, salt, and sugar.

  • In another bowl, mix egg, milk, oil, and vanilla extract. Combine wet and dry ingredients until just mixed. Fold in chopped strawberries.

  • For the cheesecake filling, beat cream cheese, sugar, egg yolk, and vanilla until smooth.

  • Fill muffin cups halfway with batter, add a spoonful of cheesecake filling, then top with remaining batter.

  • Bake for 18–22 minutes or until a toothpick inserted in the muffin (not the filling) comes out clean.

 

  • Cool in the tin for 5 minutes, then transfer to a wire rack.
