Soft, fluffy muffins filled with a creamy cheesecake center and bursts of fresh strawberries. Perfect for breakfast, brunch, or a sweet snack anytime!
Ingredients
Muffin Batter:

1 ½ cups all-purpose flour

2 tsp baking powder

¼ tsp salt

½ cup granulated sugar

1 large egg
-
½ cup milk
-
¼ cup vegetable oil or melted butter

1 tsp vanilla extract

1 cup fresh strawberries, chopped
Cheesecake Filling:

4 oz cream cheese, softened
-
2 tbsp granulated sugar
-
1 egg yolk
-
½ tsp vanilla extract
Instructions

Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.

In a bowl, whisk together flour, baking powder, salt, and sugar.

In another bowl, mix egg, milk, oil, and vanilla extract. Combine wet and dry ingredients until just mixed. Fold in chopped strawberries.

For the cheesecake filling, beat cream cheese, sugar, egg yolk, and vanilla until smooth.

Fill muffin cups halfway with batter, add a spoonful of cheesecake filling, then top with remaining batter.

Bake for 18–22 minutes or until a toothpick inserted in the muffin (not the filling) comes out clean.

Cool in the tin for 5 minutes, then transfer to a wire rack.
