Description

Ingredients

For the crust

  • 1 ½ cups graham cracker crumbs

  • ¼ cup granulated sugar

  • 6 tablespoons unsalted butter, melted

For the cheesecake filling

  • 8 ounces cream cheese, softened

  • ¼ cup granulated sugar

  • ½ teaspoon vanilla extract

  • ½ cup heavy cream

For the topping

  • 1 cup fresh strawberries, diced

  • 1 tablespoon sugar (optional)

  • Fresh mint leaves for garnish (optional)


Instructions

  • Prepare the crust: Combine graham cracker crumbs and sugar. Add melted butter and mix. Press firmly into a lined mini muffin pan or small square pan.

  • Make the cheesecake filling: Beat softened cream cheese until smooth. Add sugar and vanilla, then fold in heavy cream until creamy and slightly fluffy.

  • Assemble the bites: Spoon or pipe the filling over the crust layer. Smooth the tops.

  • Add the strawberry topping: Place diced strawberries on each cheesecake bite. Optionally, sprinkle sugar over strawberries.

  • Chill: Refrigerate for at least 2 hours until set.
