Description

These strawberry cheesecake bars are creamy, fruity, and perfectly sweet. With a buttery graham cracker crust, smooth cheesecake layer, and fresh strawberry topping, they are an easy dessert that everyone will love.


Ingredients

For the Crust

  • 1 and 1/2 cups graham cracker crumbs

  • 1/4 cup granulated sugar

  • 1/2 cup unsalted butter, melted

For the Cheesecake Layer

  • 16 oz cream cheese, softened

  • 1/2 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1/2 cup sour cream

For the Strawberry Topping

  • 1 and 1/2 cups fresh or frozen strawberries, chopped

  • 2 tablespoons granulated sugar

  • 1 teaspoon lemon juice


Instructions

  • Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.

  • Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan and bake 8-10 minutes. Let cool.

  • Beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla and sour cream.

  • Pour cheesecake mixture over the crust.

  • Mix strawberries, sugar, and lemon juice, then spread over the cheesecake layer.

  • Bake 30-35 minutes until edges are set and center is slightly jiggly.

 

  • Cool at room temperature 15-20 minutes, then refrigerate at least 2 hours before slicing.
