Ingredients
For the Crust

1 and 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted
For the Cheesecake Layer

16 oz cream cheese, softened

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/2 cup sour cream
For the Strawberry Topping

1 and 1/2 cups fresh or frozen strawberries, chopped

2 tablespoons granulated sugar

1 teaspoon lemon juice
Instructions

Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.

Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan and bake 8-10 minutes. Let cool.

Beat cream cheese and sugar until smooth. Add eggs one at a time, then stir in vanilla and sour cream.

Pour cheesecake mixture over the crust.

Mix strawberries, sugar, and lemon juice, then spread over the cheesecake layer.
