Ingredients

  • 2 cups dried split peas, rinsed

  • 1 medium onion, chopped

  • 2 carrots, chopped

  • 2 celery stalks, chopped

  • 3 cloves garlic, minced

  • 6 cups vegetable broth or chicken broth

  • 1 bay leaf

  • 1 teaspoon salt, adjust to taste

  • ½ teaspoon black pepper

  • 1 cup diced ham or smoked sausage, optional


Instructions

  • Rinse the split peas under cold water and drain well.

  • Add split peas, onion, carrots, celery, garlic, broth, bay leaf, salt, and pepper to the crockpot.

  • Stir gently to combine all ingredients.

  • Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours.

  • Remove the bay leaf and stir the soup. Adjust seasoning if needed.
