Ingredients

  • 4 large potatoes, peeled and diced

  • 1 medium onion, finely chopped

  • 2 cloves garlic, minced

  • 3 cups chicken or vegetable broth

  • 1 cup milk (or cream for extra richness)

  • 2 tablespoons butter

  • 1 teaspoon salt (adjust to taste)

  • ½ teaspoon black pepper

  • ½ teaspoon thyme (optional)

  • Optional toppings: shredded cheese, crispy bacon bits, chopped green onions, or a drizzle of cream


Instructions

  • Melt butter in a large pot over medium heat. Sauté onion and garlic until soft and fragrant.

  • Add diced potatoes and broth. Bring to a boil, then reduce heat to simmer. Cover and cook until potatoes are tender, about 15–20 minutes.

  • Blend the soup with an immersion blender until smooth (or partially for a chunky texture).

  • Stir in milk (or cream) and thyme. Season with salt and pepper. Heat gently, but do not boil.

 

  • Serve hot with optional toppings.

Notes

  • Use Russet or Yukon Gold potatoes for a creamy texture.

  • Adjust broth or milk for preferred thickness.
