Description

A refreshing and elegant summer salad combining juicy ripe peaches, creamy burrata cheese, fresh greens, toasted nuts, and a tangy balsamic drizzle. Perfect for light lunches, brunches, or as a side dish for summer dinners.


Ingredients

  • 2 ripe peaches, thinly sliced

  • 8 oz burrata cheese

  • 4 cups mixed greens (arugula, spinach, baby kale, or preferred greens)

  • 1/4 cup fresh basil leaves, torn

  • 1/4 cup toasted pine nuts or almonds

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon balsamic glaze or reduction

  • Salt and freshly ground black pepper, to taste


Instructions

  • Rinse and dry the mixed greens, then place them in a large salad bowl or on serving plates.

  • Slice peaches thinly and arrange over the greens.

  • Tear the burrata cheese into large pieces and place on top of the peaches and greens.

  • Sprinkle torn basil leaves and toasted nuts evenly across the salad.

  • Drizzle olive oil and balsamic glaze over the salad.

  • Season with salt and freshly ground black pepper.
