This One-Pan Honey BBQ Chicken Rice is a flavorful, all-in-one meal combining tender BBQ-glazed chicken, seasoned rice, and colorful vegetables in a single skillet. It’s quick, family-friendly, and perfect for busy weeknights.
Ingredients
For the Chicken Marinade:

1 lb boneless, skinless chicken breasts (or thighs), diced

1/3 cup BBQ sauce (your favorite brand)

2 tablespoons honey

1 tablespoon olive oil

1 teaspoon garlic powder

Salt and pepper to taste
For the Rice and Veggies:

1 tablespoon olive oil

1 small onion, diced

1 bell pepper, diced (any color)

1 cup uncooked long-grain white rice

2 cups chicken broth (or water + bouillon cube)

1/2 cup frozen corn (optional)

1/2 cup shredded cheddar cheese (optional, for topping)

Fresh parsley or green onions (for garnish)
Instructions

Marinate the Chicken:
In a bowl, whisk together BBQ sauce, honey, olive oil, garlic powder, salt, and pepper. Add diced chicken and coat well. Let sit while prepping other ingredients (or marinate for up to 30 minutes for deeper flavor). -
Sauté Veggies:
In a large skillet over medium heat, add 1 tablespoon olive oil. Sauté the onion and bell pepper for 3–4 minutes until softened. -
Add Rice and Liquid:
Stir in uncooked rice and toast it for about 1 minute. Then pour in the chicken broth and bring it to a simmer. -
Add Chicken:
Place the marinated chicken pieces on top of the rice. Pour any extra marinade over the skillet. -
Cover and Cook:
Reduce heat to low, cover the skillet, and simmer for 18–20 minutes until rice is tender and liquid is absorbed. Avoid lifting the lid during cooking. -
Add Cheese (Optional):
Once cooked, remove from heat. Sprinkle with shredded cheddar if desired and cover for 2–3 minutes until melted. -
Garnish and Serve:
Top with chopped parsley or green onions and serve warm.
