Description

A chewy and sweet treat that combines the soft texture of mochi with the classic donut shape. Perfect for breakfast or dessert and customizable with various glazes.


Ingredients

  • 1 cup glutinous rice flour (mochiko)

  • 1/4 cup all-purpose flour

  • 1/2 cup sugar

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/2 cup whole milk

  • 1 large egg

  • 2 tablespoons unsalted butter, melted

  • 1 teaspoon vanilla extract

  • Vegetable oil for frying

For the glaze (optional):

  • 1 cup powdered sugar

  • 23 tablespoons milk

  • 1/2 teaspoon vanilla extract


Instructions

  1. Whisk together glutinous rice flour, all-purpose flour, sugar, baking powder, and salt in a large bowl.

  2. In another bowl, mix milk, egg, melted butter, and vanilla extract until combined.

  3. Pour wet ingredients into dry ingredients and stir until smooth. Batter will be thick.

  4. Heat oil to 350°F (175°C).

  5. Pipe eight small circles connected in a ring onto parchment paper using a piping bag.

  6. Carefully transfer donuts to hot oil and fry 2-3 minutes each side until golden.

  7. Drain on paper towels.

  8. For glaze, mix powdered sugar, milk, and vanilla until smooth. Dip cooled donuts and let set.
