4 ripe mangoes (about 3 cups mango puree)

¾ cup granulated sugar

1 tbsp fresh lime juice

A pinch of salt
Instructions

Combine sugar and water in a saucepan and heat until sugar dissolves to make simple syrup. Let cool.

Peel and chop mangoes; blend into a smooth puree.

Add lime juice and salt to mango puree; blend again.

Mix in the cooled simple syrup; chill mixture for 1 hour.

Churn in an ice cream maker for 20-25 minutes or freeze and stir every 30 minutes until smooth.
