Description

This no-bake Grasshopper Pie is a refreshing mint-chocolate dessert featuring a crisp chocolate cookie crust and a fluffy, creamy filling infused with mint and chocolate liqueurs. Perfect for warm weather or holiday gatherings, it’s easy to prepare and irresistibly delicious.

For the crust:

  • 24 chocolate sandwich cookies (like Oreos)

  • 5 tablespoons unsalted butter, melted

For the filling:

  • 1 ½ cups heavy whipping cream

  • 1 cup mini marshmallows

  • ¼ cup whole milk

  • ¼ cup crème de menthe (green mint liqueur)

  • 2 tablespoons crème de cacao (clear chocolate liqueur)

  • Green food coloring (optional)

  • Chocolate shavings or crushed cookies (for garnish)

Instructions

  1. Process cookies into crumbs and mix with melted butter.

  2. Press mixture into pie dish and chill.

  3. Melt marshmallows with milk, cool.

  4. Stir in liqueurs and optional food coloring.

  5. Whip cream to stiff peaks, fold in mint mixture.

  6. Pour filling into crust and smooth top.

  7. Chill 4+ hours or overnight.

  8. Garnish and serve chilled.
