  • 1 ½ cups fresh or frozen corn kernels (thawed if frozen)

  • 1 cup shredded cheddar cheese

  • 2 large eggs

  • ½ cup all-purpose flour

  • ¼ cup cornmeal (optional, for extra crunch)

  • 2 green onions, finely chopped

  • 1 small red bell pepper, finely diced (optional)

  • 1 teaspoon baking powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • ¼ teaspoon smoked paprika (optional)

  • 2 tablespoons fresh cilantro or parsley, chopped (optional)

  • Vegetable oil, for frying


Instructions

  • Beat eggs in a large bowl.

  • Stir in flour, cornmeal, baking powder, salt, pepper, and paprika.

  • Fold in corn, cheese, green onions, red pepper, and herbs.

  • Heat oil in a skillet over medium heat.

  • Drop batter by spoonfuls, flatten slightly, and fry for 3–4 minutes per side until golden and crispy.
