Ingredients

  • 4 cups seedless watermelon, cubed

  • 2 medium cucumbers, sliced or diced

  • 1/4 cup red onion, thinly sliced

  • 1/4 cup fresh mint leaves, chopped

  • Juice of 1 lime

  • 2 tablespoons extra virgin olive oil

  • Salt and freshly ground black pepper, to taste

  • Optional: 1/4 cup crumbled feta or goat cheese


Instructions

  1. Cube watermelon and slice cucumbers and red onion.

  2. In a large bowl, combine watermelon, cucumber, onion, and mint.

  3. Whisk lime juice, olive oil, salt, and pepper in a small bowl.

  4. Drizzle dressing over the salad and toss gently.

  5. Sprinkle with feta or goat cheese if desired.

  6. Chill in the refrigerator for 15–20 minutes before serving.
