Ingredients
Meatballs:

1 lb ground beef or turkey

½ cup breadcrumbs

¼ cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

¼ cup chopped parsley

Salt and pepper
Sauce:

⅓ cup honey
-
3 cloves garlic, minced
-
¼ cup soy sauce
-
2 tablespoons ketchup
-
1 tablespoon apple cider vinegar
-
½ teaspoon red pepper flakes (optional)
Rice bake:

1½ cups uncooked white rice, rinsed

3 cups chicken broth or water
-
1 cup shredded mozzarella or cheddar cheese

½ cup chopped green onions or fresh herbs
Instructions

Preheat oven to 375°F (190°C).

Mix meatball ingredients, form meatballs, and set aside.

Whisk sauce ingredients.

Spread rice in baking dish, pour broth, arrange meatballs on top, then pour sauce over all.

Cover with foil and bake 35 minutes.

Uncover, sprinkle cheese, and bake 10–15 minutes more.
