Description

This one-pan honey garlic meatball rice bake combines juicy meatballs simmered in a sweet and savory sauce with fluffy rice and melted cheese. It’s a perfect, easy dinner for busy weeknights.


Ingredients

Meatballs:

  • 1 lb ground beef or turkey

  • ½ cup breadcrumbs

  • ¼ cup grated Parmesan cheese

  • 1 large egg

  • 2 cloves garlic, minced

  • ¼ cup chopped parsley

  • Salt and pepper

Sauce:

  • ⅓ cup honey

  • 3 cloves garlic, minced

  • ¼ cup soy sauce

  • 2 tablespoons ketchup

  • 1 tablespoon apple cider vinegar

  • ½ teaspoon red pepper flakes (optional)

Rice bake:

  • 1½ cups uncooked white rice, rinsed

  • 3 cups chicken broth or water

  • 1 cup shredded mozzarella or cheddar cheese

  • ½ cup chopped green onions or fresh herbs


Instructions

  • Preheat oven to 375°F (190°C).

  • Mix meatball ingredients, form meatballs, and set aside.

  • Whisk sauce ingredients.

  • Spread rice in baking dish, pour broth, arrange meatballs on top, then pour sauce over all.

  • Cover with foil and bake 35 minutes.

  • Uncover, sprinkle cheese, and bake 10–15 minutes more.

 

  • Garnish with green onions or herbs before serving.
