Description

This homemade potato soup is creamy, comforting, and lightened up for a healthy twist. Made with tender potatoes, savory onions, garlic, and a touch of Greek yogurt, it’s the perfect cozy meal that’s both nourishing and guilt-free.


Ingredients

  • 45 medium Yukon Gold or red potatoes, diced

  • 1 medium onion, chopped

  • 2 garlic cloves, minced

  • 4 cups low-sodium chicken or vegetable broth

  • 12 tablespoons olive oil

  • ½ cup Greek yogurt or unsweetened almond milk

  • Salt and pepper, to taste

  • Optional toppings: chopped green onions, shredded reduced-fat cheddar, fresh parsley, or a pinch of paprika


Instructions

  • Peel (if desired) and dice the potatoes. Chop the onion and mince the garlic.

  • In a large pot, heat olive oil over medium heat. Sauté onions and garlic until soft, about 3–4 minutes.

  • Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.

  • Use an immersion blender to blend until smooth, or blend only half for a chunkier texture.

  • Stir in Greek yogurt (or milk alternative). Season with salt, pepper, and optional herbs or spices.

 

  • Serve warm with optional toppings.
