Ingredients
-
4–5 medium Yukon Gold or red potatoes, diced
-
1 medium onion, chopped
-
2 garlic cloves, minced
-
4 cups low-sodium chicken or vegetable broth
-
1–2 tablespoons olive oil
-
½ cup Greek yogurt or unsweetened almond milk
-
Salt and pepper, to taste
-
Optional toppings: chopped green onions, shredded reduced-fat cheddar, fresh parsley, or a pinch of paprika
Instructions
-
Peel (if desired) and dice the potatoes. Chop the onion and mince the garlic.

In a large pot, heat olive oil over medium heat. Sauté onions and garlic until soft, about 3–4 minutes.
-
Add diced potatoes and broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
-
Use an immersion blender to blend until smooth, or blend only half for a chunkier texture.
-
Stir in Greek yogurt (or milk alternative). Season with salt, pepper, and optional herbs or spices.
-
Serve warm with optional toppings.
