Ingredients

  • 1 large egg (room temperature)

  • 1 tablespoon Dijon mustard (or yellow mustard)

  • 1 tablespoon lemon juice or white wine vinegar

  • 1 cup neutral oil (like sunflower, canola, or light olive oil)

  • 1/4 teaspoon salt (or to taste)

  • Optional: pinch of sugar, garlic powder, or paprika


Instructions

  • Add the egg, mustard, and lemon juice (or vinegar) to a tall jar or bowl.

  • Pour in the oil.

  • Use an immersion blender, regular blender, or whisk to emulsify the mixture until thick and creamy.

  • Season with salt and optional ingredients. Blend again if needed.
