Ingredients

  • 1 cup whole-grain crackers or oats, crushed

  • 2 tablespoons melted coconut oil

  • 8 oz reduced-fat cream cheese

  • 1/2 cup Greek yogurt

  • 1/4 cup maple syrup or honey

  • 1 teaspoon vanilla extract

  • 1 cup chopped fresh strawberries (plus extra for topping)

  • 1/4 cup toasted nuts or puffed whole-grain cereal


Instructions

  • Mix crushed crackers or oats with coconut oil and press into the bottom of an 8-inch springform pan. Chill.

  • Beat cream cheese with Greek yogurt until smooth. Add maple syrup and vanilla, mixing well.

  • Fold in chopped strawberries, reserving a few for topping.

  • Spread filling over crust evenly. Sprinkle with nuts or cereal and arrange reserved strawberries on top.

 

  • Refrigerate for 2–3 hours until set. Slice and enjoy.
