Description

Start your day with this wholesome and delicious oatmeal apple cake. Packed with rolled oats, fresh apples, and warm spices, it’s naturally sweetened with honey or maple syrup and made with nutritious ingredients. Ingredients

  • 1 ½ cups rolled oats

  • 1 cup whole wheat flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • 1 tsp ground cinnamon

  • ½ tsp ground nutmeg

  • ½ tsp salt

  • 2 large eggs

  • ½ cup Greek yogurt (or plant-based yogurt)

  • ⅓ cup honey or maple syrup

  • ⅓ cup melted coconut oil (or vegetable oil)

  • 1 tsp vanilla extract

  • ½ cup milk (dairy or plant-based)

  • 1 ½ cups chopped apples (firm varieties like Granny Smith or Honeycrisp)

  • Optional: ½ cup chopped nuts (walnuts or pecans), raisins or dried cranberries


Instructions

  • Preheat oven to 350°F (175°C). Grease or line an 8-inch square baking pan with parchment paper.

  • In a large bowl, mix the oats, flour, baking powder, baking soda, cinnamon, nutmeg, and salt until combined.

  • In a separate bowl, whisk together the eggs, yogurt, honey (or maple syrup), melted coconut oil, vanilla, and milk until smooth.

  • Pour the wet ingredients into the dry and stir gently until just combined.

  • Fold in chopped apples and any optional nuts or dried fruit.

  • Pour batter into the prepared pan and spread evenly. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.

 

  • Let cool for 10 minutes in the pan before transferring to a wire rack to cool completely. Slice and serve.
