Ingredients

  • 1 lb (450g) ground beef

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 3 carrots, diced

  • 2 celery stalks, diced

  • 2 potatoes, peeled and cubed

  • 1 cup green beans, chopped (optional)

  • 1 cup corn kernels (optional)

  • 1 can (14.5 oz) diced tomatoes

  • 6 cups beef or vegetable broth

  • 1 tsp salt (adjust to taste)

  • ½ tsp black pepper

  • 1 tsp dried thyme

  • 1 bay leaf


Instructions

  • Cook the Beef: In a large soup pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.

  • Sauté Aromatics: Add onion and garlic; cook 2–3 minutes until softened and fragrant.

  • Add Vegetables & Broth: Stir in carrots, celery, potatoes, tomatoes, and broth. Season with salt, pepper, thyme, and bay leaf.

  • Simmer: Bring to a boil, then reduce heat and simmer for 20 minutes, or until vegetables are tender.

  • Optional Veggies: Add green beans and corn; cook an additional 5 minutes.

 

  • Serve: Remove bay leaf and ladle soup into bowls. Enjoy warm with crusty bread!
