Description

This easy and healthy Ground Turkey and Zucchini Skillet combines lean ground turkey with fresh zucchini and simple seasonings. Ready in about 30 minutes, it makes a perfect low-carb meal for busy days. The Parmesan cheese adds a nice touch of flavor.


Ingredients

  • 1 pound ground turkey

  • 2 medium zucchinis

  • 1 tablespoon olive oil

  • 1⁄2 medium onion

  • 2 cloves garlic

  • 1 teaspoon dried oregano

  • 1⁄2 teaspoon salt

  • 1⁄4 teaspoon black pepper

  • 1⁄4 teaspoon crushed red pepper flakes

  • 1⁄4 cup chicken broth

  • 1⁄4 cup grated Parmesan cheese


Instructions

  • Heat olive oil in a large skillet over medium heat.

  • Chop the onion finely and add to skillet. Cook 3–4 minutes until soft.

  • Mince garlic and add to skillet. Cook 30 seconds.

  • Add ground turkey. Break up with spoon. Cook 6–8 minutes until browned.

  • Wash and trim zucchinis. Slice lengthwise then into 1/4 inch half-moons.

  • Add zucchini to skillet. Cook 4–5 minutes until slightly soft.

  • Add oregano, salt, pepper, and red pepper flakes. Stir well.

  • Pour chicken broth in. Simmer on low for 3–4 minutes.

  • Sprinkle Parmesan cheese on top. Stir until melted.

 

  • Taste and adjust seasoning. Serve immediately.
