Ingredients

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon cumin

1 cup fresh or frozen corn kernels

1 small red bell pepper, diced

½ small red onion, finely chopped

1 jalapeño, minced (optional)

Juice of 1 lime

2 tablespoons fresh cilantro, chopped

½ cup Greek yogurt or sour cream

1 tablespoon lime juice

1 teaspoon honey or agave syrup

1 teaspoon hot sauce (optional)

1 ripe avocado, sliced

2 cups cooked brown rice or quinoa

Instructions

Toss shrimp with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Marinate 10 minutes.

Mix corn, bell pepper, onion, jalapeño, lime juice, cilantro, salt, and pepper for salsa. Set aside.

Whisk Greek yogurt, lime juice, honey, hot sauce, salt, and pepper for sauce. Adjust taste.

Grill shrimp 2–3 minutes per side until opaque and charred.
