Description

A vibrant, healthy grilled shrimp bowl featuring smoky shrimp, creamy avocado, fresh corn salsa, and a zesty creamy sauce — perfect for quick dinners or meal prep.


Ingredients

  • 1 lb large shrimp, peeled and deveined

  • 2 tablespoons olive oil

  • 1 teaspoon smoked paprika

  • 1 teaspoon garlic powder

  • ½ teaspoon cumin

  • Salt and pepper to taste

  • 1 cup fresh or frozen corn kernels

  • 1 small red bell pepper, diced

  • ½ small red onion, finely chopped

  • 1 jalapeño, minced (optional)

  • Juice of 1 lime

  • 2 tablespoons fresh cilantro, chopped

  • ½ cup Greek yogurt or sour cream

  • 1 tablespoon lime juice

  • 1 teaspoon honey or agave syrup

  • 1 teaspoon hot sauce (optional)

  • 1 ripe avocado, sliced

  • 2 cups cooked brown rice or quinoa

  • Fresh cilantro and lime wedges for garnish


Instructions

  • Toss shrimp with olive oil, smoked paprika, garlic powder, cumin, salt, and pepper. Marinate 10 minutes.

  • Mix corn, bell pepper, onion, jalapeño, lime juice, cilantro, salt, and pepper for salsa. Set aside.

  • Whisk Greek yogurt, lime juice, honey, hot sauce, salt, and pepper for sauce. Adjust taste.

  • Grill shrimp 2–3 minutes per side until opaque and charred.

 

  • Assemble bowls with rice/quinoa, shrimp, corn salsa, avocado, and drizzle sauce. Garnish with cilantro and lime.
