Ingredients
For the Chicken

1 1/2 lbs boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

1/2 cup cornstarch

2 eggs, beaten

For the Sauce

1/4 cup soy sauce

3 tbsp hoisin sauce

3 tbsp rice vinegar

2 tbsp sugar

1 tbsp cornstarch mixed with 2 tbsp water (slurry)

1/2 cup chicken broth or water

1 tsp sesame oil

1 tbsp minced ginger

2 cloves garlic, minced

1/2 tsp crushed red pepper flakes (adjust to taste)

Instructions

Pat chicken dry. Dip in beaten eggs, then coat with cornstarch.

Heat oil in a deep skillet over medium-high heat. Fry chicken in batches until golden and crispy. Drain on paper towels.

Whisk together soy sauce, hoisin sauce, rice vinegar, sugar, chicken broth, and sesame oil.

In a clean skillet, sauté garlic, ginger, and red pepper flakes until fragrant.

Add sauce mixture to skillet; bring to simmer. Stir in cornstarch slurry and cook until thickened.
