Ingredients

2 tablespoons olive oil

1 tablespoon butter or vegan butter

1 medium onion, thinly sliced

2 cups mushrooms, cremini or white, sliced

3 cups cauliflower florets

3 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1/4 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

Splash of vegetable broth or water for steaming
Instructions

Heat olive oil and butter in a large skillet over medium heat. Add sliced onions and sauté until soft and golden, about 3-4 minutes.

Add mushrooms and cook, stirring occasionally, until browned and tender, about 6-8 minutes.

Stir in cauliflower florets and splash vegetable broth or water. Cover and steam for 5-7 minutes until cauliflower is tender but firm.

Remove lid and add minced garlic, red pepper flakes (if using), salt, and pepper. Cook for 2-3 more minutes until garlic is fragrant.
