Ingredients

  • 2 tablespoons olive oil

  • 1 tablespoon butter or vegan butter

  • 1 medium onion, thinly sliced

  • 2 cups mushrooms, cremini or white, sliced

  • 3 cups cauliflower florets

  • 3 cloves garlic, minced

  • 1 tablespoon fresh parsley, chopped

  • 1/4 teaspoon red pepper flakes (optional)

  • Salt and black pepper to taste

  • Splash of vegetable broth or water for steaming


Instructions

  1. Heat olive oil and butter in a large skillet over medium heat. Add sliced onions and sauté until soft and golden, about 3-4 minutes.

  2. Add mushrooms and cook, stirring occasionally, until browned and tender, about 6-8 minutes.

  3. Stir in cauliflower florets and splash vegetable broth or water. Cover and steam for 5-7 minutes until cauliflower is tender but firm.

  4. Remove lid and add minced garlic, red pepper flakes (if using), salt, and pepper. Cook for 2-3 more minutes until garlic is fragrant.

  5. Stir in fresh parsley. Taste and adjust seasoning if needed. Serve hot.
