This Easy Vegetable Biryani is a fragrant, colorful one-pot meal loaded with aromatic spices, basmati rice, and fresh mixed vegetables. Perfect for a comforting vegetarian lunch or dinner, it’s simple to make and bursting with rich flavors from traditional Indian spices.
Ingredients

1 ½ cups basmati rice

3 cups mixed vegetables (carrots, peas, green beans, potatoes), chopped

1 large onion, thinly sliced

2 tomatoes, chopped

3 tablespoons vegetable oil or ghee

1 teaspoon cumin seeds

2 green cardamom pods
-
4 cloves
-
1 small cinnamon stick

1 bay leaf

1 teaspoon ginger-garlic paste

1 teaspoon turmeric powder

1 teaspoon red chili powder (adjust to taste)

1 ½ teaspoons garam masala

Salt, to taste

3 cups water or vegetable broth

Fresh cilantro and mint leaves, chopped (for garnish)

Instructions

Rinse and soak rice for 20-30 minutes; drain.

Sauté whole spices and onions until golden.
