Description

This light and fluffy cottage cheese cloud bread is a low-carb, gluten-free alternative to traditional bread. Made with simple ingredients, it’s perfect for sandwiches, toast, or a healthy snack.

  • 3 large eggs, separated

  • 4 oz (½ cup) cottage cheese

  • 1 teaspoon baking powder

  • ¼ teaspoon cream of tartar (optional)

  • 1 tablespoon olive oil or melted butter (optional)

  • Salt to taste

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.

  2. Separate egg whites and yolks into two bowls.

  3. Mix yolks with cottage cheese, baking powder, olive oil (if using), and salt.

  4. Beat egg whites with cream of tartar until stiff peaks form.

  5. Gently fold egg whites into yolk mixture in batches.

  6. Scoop batter onto baking sheet in 6 mounds, shaping each.

  7. Bake for 25–30 minutes until golden and set.

  8. Cool slightly before serving.
