2 cups granulated sugar

1/2 cup light corn syrup

1/2 cup water

2 large egg whites, room temperature

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup chopped pecans or walnuts (optional)
Instructions

Line a baking sheet with parchment paper or lightly grease it.

In a medium saucepan, combine sugar, corn syrup, and water. Cook over medium heat until sugar dissolves.

Bring the mixture to 250°F (soft-ball stage) using a candy thermometer.

Beat egg whites and salt in a large bowl until soft peaks form.

Slowly pour the hot sugar syrup into the egg whites while beating on low speed.

Increase mixer speed to high and whip until stiff peaks form and mixture loses its shine, about 7–10 minutes.

Fold in vanilla and nuts, if using.

Drop spoonfuls of candy onto the prepared baking sheet. Let cool completely at room temperature.
