Description

A refreshing salad combining crisp cucumber and sweet strawberries with a light honey-lime dressing and fresh mint. Perfect for warm days or anytime you want a light, flavorful dish.


Ingredients

  • 2 medium cucumbers, thinly sliced

  • 1 pint fresh strawberries, hulled and sliced

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon honey

  • 1 tablespoon fresh lime juice (or lemon juice)

  • 1/4 cup fresh mint leaves, chopped

  • Salt and freshly ground black pepper, to taste


Instructions

  • In a large bowl, combine the sliced cucumbers and strawberries.

  • In a small bowl, whisk together the olive oil, honey, and lime juice until smooth.

  • Pour the dressing over the cucumber and strawberry mixture. Toss gently to coat evenly.

  • Add salt and pepper to taste.

  • Sprinkle chopped fresh mint on top and toss lightly again.

 

  • Chill for 10-15 minutes before serving for best flavor, or serve immediately.
