Ingredients
For the Steak Strips:

1 lb flank steak or sirloin, thinly sliced

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon chili powder

½ teaspoon smoked paprika

Salt and black pepper, to taste

Juice of ½ lime (optional)
For the Creamy Queso Rice:

1 tablespoon butter

1 small onion, finely diced

2 garlic cloves, minced

1 cup long-grain rice

2 cups chicken broth or water

½ cup milk or heavy cream

1 ½ cups shredded cheddar cheese (or Mexican blend)

½ teaspoon cumin

¼ teaspoon chili powder

Salt and pepper, to taste

Fresh cilantro or green onions, chopped (for garnish)
Instructions

Toss steak strips with olive oil, garlic powder, chili powder, smoked paprika, salt, and pepper; marinate 10–15 minutes.

Cook steak strips in a hot skillet 2–3 minutes per side; set aside and optionally squeeze lime juice over.

In the same skillet, melt butter and sauté onion and garlic until fragrant.

Stir in rice, toast 1–2 minutes, then add broth and simmer covered until tender, about 15–18 minutes.

Remove from heat, stir in milk, cheese, cumin, chili powder, salt, and pepper until creamy.
