Description

This creamy queso rice topped with juicy, perfectly seasoned steak strips is a comforting and flavorful meal that’s easy to prepare. The cheesy rice pairs beautifully with tender, spiced steak for a dish that’s perfect for weeknight dinners or entertaining guests.

For the Steak Strips:

  • 1 lb flank steak or sirloin, thinly sliced

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon chili powder

  • ½ teaspoon smoked paprika

  • Salt and black pepper, to taste

  • Juice of ½ lime (optional)

For the Creamy Queso Rice:

  • 1 tablespoon butter

  • 1 small onion, finely diced

  • 2 garlic cloves, minced

  • 1 cup long-grain rice

  • 2 cups chicken broth or water

  • ½ cup milk or heavy cream

  • 1 ½ cups shredded cheddar cheese (or Mexican blend)

  • ½ teaspoon cumin

  • ¼ teaspoon chili powder

  • Salt and pepper, to taste

  • Fresh cilantro or green onions, chopped (for garnish)


Instructions

  • Toss steak strips with olive oil, garlic powder, chili powder, smoked paprika, salt, and pepper; marinate 10–15 minutes.

  • Cook steak strips in a hot skillet 2–3 minutes per side; set aside and optionally squeeze lime juice over.

  • In the same skillet, melt butter and sauté onion and garlic until fragrant.

  • Stir in rice, toast 1–2 minutes, then add broth and simmer covered until tender, about 15–18 minutes.

  • Remove from heat, stir in milk, cheese, cumin, chili powder, salt, and pepper until creamy.

 

  • Serve rice topped with steak strips and garnish with cilantro or green onions.
