Ingredients

  • 1 cup cherry tomatoes, halved

  • 1/2 cup diced bell peppers (red or yellow)

  • 1/4 cup red onion, thinly sliced

  • 1/2 cup cucumber, diced

  • 1/2 cup shredded mozzarella or cubed cheese (optional)

  • 1/4 cup pepperoni slices or salami (optional)

  • 1/4 cup fresh basil or parsley, chopped

Dressing:

  • 1/4 cup olive oil

  • 3 tablespoons red wine vinegar

  • 1 teaspoon Dijon mustard

  • 1 teaspoon Italian seasoning

  • 1 clove garlic, minced
