Ingredients

  • Olive oil or butter

  • 1 onion, chopped

  • 2 garlic cloves, minced

  • 2 carrots, sliced

  • 2 celery stalks, chopped

  • 2 potatoes, diced

  • 6 cups chicken or vegetable broth

  • 1 to 2 cups cooked chicken or turkey, shredded

  • Salt, to taste

  • Black pepper, to taste

  • Dried thyme or Italian seasoning

  • Fresh parsley, for garnish


Instructions

  • Heat oil or butter in a large pot over medium heat.

  • Add onion, carrots, and celery. Cook until softened.

  • Stir in garlic and cook briefly.

  • Add potatoes and broth. Bring to a gentle boil.

  • Reduce heat and simmer until potatoes are tender.

  • Add cooked chicken or turkey and seasonings.

  • Simmer a few minutes more, then adjust seasoning.

 

  • Serve hot with fresh parsley on top.
