1 medium onion, chopped

2–3 carrots, sliced

2 celery stalks, sliced

8 cups chicken broth

2 cups cooked chicken, shredded or diced

2 cups egg noodles or preferred pasta

1 teaspoon dried thyme

1 teaspoon dried parsley

Salt and black pepper, to taste

Instructions

Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5–7 minutes until softened. Add garlic and cook 1 minute more.

Pour in chicken broth. Add thyme, parsley, salt, and pepper. Bring to a gentle boil, then reduce heat and simmer for 10–15 minutes.
