Description

Ingredients

  • 2 tablespoons olive oil

  • 1 medium onion, chopped

  • 23 carrots, sliced

  • 2 celery stalks, sliced

  • 3 cloves garlic, minced

  • 8 cups chicken broth

  • 2 cups cooked chicken, shredded or diced

  • 2 cups egg noodles or preferred pasta

  • 1 teaspoon dried thyme

  • 1 teaspoon dried parsley

  • Salt and black pepper, to taste

  • Optional: lemon juice or a pinch of red pepper flakes


Instructions

  • Heat olive oil in a large pot over medium heat. Sauté onion, carrots, and celery for 5–7 minutes until softened. Add garlic and cook 1 minute more.

  • Pour in chicken broth. Add thyme, parsley, salt, and pepper. Bring to a gentle boil, then reduce heat and simmer for 10–15 minutes.

  • Stir in cooked chicken and warm through for 5 minutes.

  • Add noodles and cook according to package instructions until tender.

  • Taste and adjust seasoning. Optionally, add lemon juice or red pepper flakes.

 

  • Serve hot with bread or garnished with fresh herbs.
