Description

This broccoli cheese soup easy is a quick, creamy, and comforting meal. Packed with tender broccoli and rich cheddar cheese, it comes together in under 30 minutes, making it perfect for busy weeknights or cozy lunches.


Ingredients

  • 2 tablespoons butter

  • 1 small onion, chopped

  • 2 cloves garlic, minced

  • 4 cups broccoli florets

  • 2 cups chicken or vegetable broth

  • 1 cup half-and-half or milk

  • 2 cups shredded cheddar cheese

  • Salt and black pepper, to taste

  • Optional: pinch of nutmeg or cayenne


Instructions

  • Melt butter in a large pot over medium heat. Sauté onion for 3–4 minutes until softened. Add garlic and cook 1 minute.

  • Add broccoli and broth. Bring to a gentle boil, then reduce heat and simmer 8–10 minutes until broccoli is tender.

  • Optional: blend slightly with an immersion blender for a smoother texture.

  • Reduce heat to low, stir in half-and-half, then gradually add shredded cheddar cheese, stirring until melted and smooth.

 

  • Season with salt, pepper, and optional nutmeg or cayenne. Serve hot, garnished as desired.
