Ingredients

  • 1 tablespoon olive oil

  • 2 garlic cloves, minced

  • 1 chicken breast (or tofu for vegetarian option), sliced thin

  • 1 cup cooked black beans (canned, drained and rinsed)

  • 1 cup collard greens or kale, chopped

  • 1/2 teaspoon ground cumin

  • 1/2 teaspoon smoked paprika

  • Salt and pepper to taste

  • Lime wedges and chopped parsley for garnish (optional)


Instructions

  • Heat olive oil in a skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant.

  • Add the chicken (or tofu) and cook for 5–6 minutes until lightly browned and cooked through.

  • Stir in black beans, greens, cumin, paprika, and a pinch of salt and pepper.

  • Cook for another 3–4 minutes, stirring occasionally, until the greens are wilted and everything is heated through.

 

  • Serve hot with a squeeze of lime and fresh parsley, if desired.
