A refreshing and colorful summer salad made with sweet peaches, juicy blueberries, tangy feta cheese, and fresh greens, topped with a honey lemon dressing. Perfect for a light lunch or a side dish at your next picnic or barbecue.

Ingredients

Scale
  • For the Salad:

    • 4 cups mixed greens (spinach, arugula, or spring mix)

    • 2 ripe peaches, sliced

    • 1 cup fresh blueberries

    • 1/2 cup crumbled feta cheese

    • 1/4 cup red onion, thinly sliced

    • 1/4 cup pecans or walnuts (optional, toasted)

  • For the Honey Lemon Dressing:

    • 2 tablespoons olive oil

    • 1 tablespoon lemon juice (fresh)

    • 1 tablespoon honey

    • 1 teaspoon Dijon mustard

    • Salt and pepper to taste

Instructions

  1. Make the Dressing:
In a small bowl or jar, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until well combined.

  2. Assemble the Salad:
In a large mixing bowl or salad platter, add the greens. Top with sliced peaches, blueberries, red onion, and crumbled feta.

  3. Add Dressing & Serve:
Drizzle the dressing over the salad just before serving. Gently toss to combine, being careful not to crush the fruit.
