  • 1 cup buttermilk

  • 1/2 cup vegetable oil

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1/2 cup blackberry puree (fresh or frozen, blended and strained)

  • 1/2 cup unsalted butter, softened

For the Blackberry Filling:

  • 2 cups fresh or frozen blackberries

  • 1/4 cup granulated sugar

  • 1 tbsp lemon juice

  • 1 tbsp cornstarch

  • 1 cinnamon stick

  • 2 tbsp water

For the Chocolate Ganache:

  • 1 cup heavy cream

  • 1 1/2 cups semi-sweet or dark chocolate (chopped)

  • 1 tbsp unsalted butter (optional)

For Decoration:

  • Fresh blackberries

  • Edible flowers or silver dragees (optional)


Instructions

  1. Prepare the Cake Layers:
    Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment. Whisk together flour, sugar, baking soda, and salt. In another bowl, beat softened butter, oil, eggs, vanilla, and blackberry puree. Alternate adding dry ingredients and buttermilk, mixing just until combined. Divide batter evenly and bake for 25–30 minutes. Cool in pans for 10 minutes, then on a rack.

  2. Make the Blackberry Filling:
    Simmer blackberries, sugar, lemon juice, cinnamon, and water over medium heat for 5–7 minutes. Whisk cornstarch with water, stir in, and cook until thick. Cool completely and strain if you want it seedless.

  3. Prepare the Ganache:
    Heat cream until simmering. Pour over chopped chocolate, let sit 2 minutes, then stir smooth. Mix in butter for shine.

  4. Assemble the Cake:
    Trim cake layers as needed. Place one layer on your stand; spread a thin layer of ganache and blackberry filling. Top with the second layer. Pour ganache over the top, let it drip for that gothic effect.

  5. Decorate:
    Garnish with fresh blackberries, edible flowers, or dragees for dramatic flair.

  6. Serve:
    Slice and serve at room temperature, letting its flavors and visual beauty create lasting memories.
